  • 3 tablespoons unsalted butter
  • 3 tablespoons extra-virgin olive oil
  • 2 cups low-fat sour cream
  • 2 teaspoons fresh thyme (minced)

Once the butter melts, add the onion slices to it, and sprinkle salt and pepper for taste. Stir and cook over low heat for 20 minutes, until the onions turn golden brown. Let the caramelized onions cool down before adding them to a food processor. To this, add half of the sour cream, thyme, and balsamic vinegar. Blend to make a coarse puree. Transfer it to a bowl, and stir in the remaining sour cream. Refrigerate for 3-4 hours, and serve.

In the same way, you can prepare sour cream dip for vegetables by increasing the spiciness or altering the seasoning ingredients. Or a simple method is to combine 1 package each of your favorite vegetable soup mix and sour cream. Stir well, and refrigerate the dip for 1-2 hours. Serve it chilled with fresh veggies or steamed green leafy vegetables. The easiest of all is making sour cream fruit dip. You simply need to mix sour cream with dry fruits, vanilla extract, and sugar (optional) in a mixing bowl, and serve it with fresh fruit slices.

In case you are watching your daily calorie intake, prepare a low calorie version of the sour cream dip. All you need to do is substitute ¼ of the sour cream with plain, non-fatty yogurt. This chip dip tastes equally good, except that it will have a thinner consistency.
